Food Entry

Who doesn't love food? We do a lot of experimental cooking at our house. I subscribe to Cooking Light magazine and usually try to test out at least 2-3 new recipes per issue--sometimes more. We have a rating system. I ask Dirk to give it a score, out of ten. Recipes that are 8 and up get cut out and put in notebook to be repeated.

Today's repeat recipe is Stromboli! It's sort of like a calzone, but without the sauce. You make dough, roll it out and put meat and cheese in it and seal it up. Then you let it rise for an hour and bake. It's very good, but there is always a little more bread than there is filling. This is our third time to make it, but this time we decided to make two small stromboli instead of one big one. One is ham and swiss, and the other is pepperoni and mozzarella. (Turkey pepperoni, 70% less fat!)

While the stromboli was rising I made a New Mexican chili sauce that I'll use to make enchiladas tomorrow night. It's another Cooking Light recipe, but takes quite a bit of effort. I had to take the seeds and stems off the dried chilis, grind them in a coffee grinder then boil it with a bunch of other stuff. I knew I was onto something when Dirk came in and started dipping bread in it. I sure hope the enchiladas turn out yummy.

IN OTHER NEWS: The bathroom is 99.9% FINISHED!!! I have to do some minor touch up painting and it is DONE. Of course I have yet to decorate it, no shower curtain or rug, but that doesn't count. I'm thinking of construction work. That is complete! I'll take pictures and post them when it's official.

Now I must stop blogging and get back to work. I have some logos to finish up and some knitting to do.
